Coho Salmon (Oncorhynchus kisutch) is available all year as H&G frozen, fillets, and portions. It is a good smoking fish with a reddish /orange flesh color. It can have softer flesh than sockeye or chum, but is lends itself well to smoking, refresh, and portions. Average size 4.5 kgs

Sockeye Salmon (Oncorhynchus nerka) is available throughout the year as frozen H&G, fillets, and portions. It is a premier smoking salmon for is deep red color, good oil content, and availability. Average size 4 kg.

Chum Salmon (Oncorhynchus keta) is caught in large numbers to be available all year. It is favored for fillets and portions, but used for smoking, especially hot smoked. Chum also makes a superior gravad lachs. Flesh is firm with a pink to red color. It has moderate fat content and mild flavor. Average size 3.6 kg.

Chinook Salmon (Oncorhynchus tschawytcha) The largest of the pacific salmon species, it is caught in small numbers and is available as frozen H&G, fillets and portions. With a high oil content and good meat color, ranging form white to bright red, Chinook lends itself well to cold and hot smoking. Chinook can weigh up to 30 kg.

Pink Salmon (Oncorhynchus  gorbuscha) is available year round. Mainly used for portions and block frozen, it is also used in hot or cold smoked products. Flesh color is pale to rose color, with a fine texture, and mild flavor. Average size 1.3 kg

Pacific Halibut (Hippoglossus stenolepis) Available all year as frozen H&G, fillets, and portions. It is very nice smoked.

Black Cod/Sablefish (Anolopoma fimbria) available as frozen H&G in limited quantity. Rich in oil content, it is excellent smoked.

Pacific Pollock (Therga chalcogramma) available all year as block frozen, portions, and fillets.
